To keep things super simple, follow the 6-2-2 rule for how to cook pork like a pro every time: cook on one side for 6 minutes, the other side for 2 minutes, and rest for a further 2 minutes.
Pork chops tend to dry out and burn when you cook them on the stove-top alone, but by frying one side first and getting it good and brown, then turning it over and putting it in the oven to finish cooking, you get the best of both worlds.
When it comes to breading meat, most breading procedures are basically the same. But taking the extra time to soak your meat in buttermilk and let the flour set will ensure that your breading is fully adhered for the perfect breaded pork chops or breaded chicken.
Then, if you want your pork to be extra tender, you can marinate it in a tenderizing marinade made with acids, like citrus juices, vinegar, or wine. For easier tenderizing, use a commercial meat tenderizer by wetting the surface of the meat, and then sprinkling the tenderizer over the meat.
Mild tenderizing is accomplished through the use of acidic ingredients. Lemon juice, flavored vinegar, red wine, and coffee are all recommended as marinade ingredients that can soften the meat a little.
The safe internal pork cooking temperature for fresh cuts is 145° F. To check doneness properly, use a digital cooking thermometer. Fresh cut muscle meats such as pork chops, pork roasts, pork loin, and tenderloin should measure 145° F, ensuring the maximum amount of flavor.

Coat each side of the pork chops, applying pressure to make the batter stay on during cooking. One coat is good for a thin layer of batter. For a thicker coating, dip them in a separate bowl of a little milk with an egg mixed well, and again in the flour. Make sure oil is hot.
Pork Chops – Make sure to get single bone-in thin cut pork chops so that they cook quickly and evenly. Flour – You will need all-purpose flour, but you can alternatively use self-rising flour. Eggs – Large cold eggs will be perfect. Buttermilk – I like to use buttermilk, but you can simply use whole milk.

A brine is essentially just salt and water. It helps prevent moisture loss during cooking, and the salt also helps tenderize the meat from the inside out.
